I feel bad that I have been neglecting this blog! I've learned that maintaining one on a regular basis is hard enough and I have great respect for those who manage to balance two. I'll try to post here more often, but my book blog is my first priority, so you'll find me over there much more. I made a lunch today that I just had to share, though!
Chicken Soft Tacos:
3 (small) corn tortillas
Sharp cheddar cheese
1 cooked chicken breast (or any similar amount of cooked chicken)
3 spoonfuls of Chipotle Yumm! Sauce® *
3 spoonfuls of Sour cream
3 spoonfuls of Salsa
Mixed salad greens
(The amounts are suggestions, but the great thing about this recipe is that you can put as much or as little of each ingredient as you like.)
Set your oven to broil. On a cookie sheet lay out the three tortillas and over them with a thin layer of cheddar cheese. Pull apart the chicken with your hands and sprinkle it over the cheese. Lastly, put a spoonful of the Yumm! Sauce® over each tortilla and put the cookie sheet in the oven for 2-5 minutes, or until the cheese is bubbly. Once you have taken the tacos out of the oven, dollop on the sour cream and salsa and sprinkle on the mixed salad greens. I recommend putting the greens to one side of the tortilla so that it is easier to fold. Dig in!
*Yumm! Sauce® is a product of Cafe Yumm!® which is a local restaurant chain in Oregon and Washington. They sell there sauce at various grocery outlets in the Pacific Northwest, but if you live outside of that area the sauce is only available by ordering a case of 6 8.2 ounce jars. So it may be more trouble than it is worth. If you ever find yourself in my neck of the woods though, I recommend you check it out!
